FIELD: food industry.

SUBSTANCE: invention relates to the food industry. Brassica rapa paste production method envisages root washing, inspection, cleaning and milling into 5–7 mm pieces. Milled root vegetables are treated for 3–5 minutes in a microwave chamber at power 700 W. Grinding is performed in the grinding machine till homogeneous mass. Obtained puree is concentrated at temperature of 50–55 °C in a vacuum apparatus to dry substances content of 35 %. Finished paste is packaged into prepared container.

EFFECT: invention allows to produce a paste with enhanced nutritive value, expand range of pasty semi-products and reduce energy consumption.
