FIELD: food industry.
SUBSTANCE: installation for lactose crystallisation includes two columns with covers and nozzles for supply of crystallised solution with unions to discharge air from them, bubblers for cyclic supply of hot and cold air in the column, wherein channels in barbotage have tangential direction, with unions for discharge of finished crystal mass. Each column has jacket with helical guide for appropriate supply of hot and cold water.
EFFECT: unit ensures intensification of heat exchange, possibility to combine two crystallization and evaporation processes, possibility of varying temperature modes of crystallization and evaporation processes in a wide range, as well as improvement of quality and quantity of obtained crystalline lactose.
