FIELD: fat and oil industry.
SUBSTANCE: invention relates to oil and fat industry and concerns oil for roasting products in a thin layer of oil and in deep-frying fat. Composition for frying, which contains refined deodorized oil or mixture of oils and a stabilising additive. Stabilising additive is represented by a complex stabilising system of the following composition, % of total weight of the composition: antioxidant 0.01-0.09, mono-and diglycerides of fatty acids 0.01-0.1, polydimethylsiloxane 0.0004-0.001, lecithin - max. 0.001.
EFFECT: invention enables to obtain a composition for frying with high oxidative stability and reduced carryover with the product.
