FIELD: beverage preparation devices.
SUBSTANCE: invention relates to beverages, in particular to a method of producing a beverage. Disclosed is a paste for producing a beverage, wherein the paste has a homogeneous aqueous phase, wherein the paste contains from 0.1 to 50 wt.% of a sweetener; from 10 to 50 wt.% fat; from 10 to 50 wt.% of fructan having molecular weight below 1 × 104 Da; and from 0.5 to 5 wt.% of high molecular weight polysaccharides having molecular weight from 1 × 104 Da and 2.5 × 106 Da, wherein the paste does not contain added monoacylglycerols, diacylglycerols and diacetyl tartaric acid esters and monoglycerides, wherein at least part of the fat is provided by the nut component containing nut protein and fat, and the viscosity of the paste ranges from 3,000 to 45,000 mPa·s at a shear rate of 75 s-1 at 20 °C. Disclosed is use of said paste as a paste for producing a beverage. Also disclosed is a method of producing said paste, involving mixing of ingredients at temperature from 65 to 85 °C for a period of time from 3 to 10 minutes.
EFFECT: invention provides a beverage that can be comfortably produced from the paste by simply mixing the paste with water, so, the composition stabilizes small drops of oil in the homogeneous aqueous phase of the paste so that the fat is easily dispersed in the aqueous beverage without causing large oil globules to appear on the surface of the beverage.
