SUBSTANCE: invention relates to the oil and fat industry. A fat or oil composition containing a vitamin B1 derivative or a salt thereof in the range of 44 to 8000 ppm with respect to thiamine with hydroxyl number in the range of 9 to 100 mg-KOH/g, wherein content C (ppm) of the vitamin B1 derivative or salt thereof with respect to thiamine with hydroxyl number of X (mg-KOH/g) satisfies the relationship: Ln(C/143)]/X≤0.044, where Ln is a natural logarithm. A fat or oil composition containing nicotinamide in the range of 1000 to 20000 ppm with respect to thiamine with hydroxyl number in the range of 9 to 100 mg-KOH/g, wherein content C (ppm) of nicotinamide with hydroxyl number of X (mg-KOH/g) satisfies the relationship: Ln(C/850)]/X≤0.038, where Ln is a natural logarithm.

EFFECT: invention enables to obtain a composition with high content of vitamin B1 or derivatives thereof or nicotinamide, with low bitterness.
