FIELD: technological processes; food industry.
SUBSTANCE: invention relates to a method of producing malt extract from triticale grains. Method comprises cleaning triticale grains from grain impurities, dust, metal impurities, sorting by grain size, washing, removing float, disinfection, soaking triticale at temperature of 10-15 °C in tap water to moisture content of 42-43 %, sprouting at temperature 15-17 °C for 5-6 days, crushing, infusion mashing by mixing crushed malt with tap water pre-heated to temperature of 42-45 °C at water duty 1:3.0-1:3.5 and maintaining at said temperature for 35-40 minutes, then raising temperature to 52-55 °C, holding for 45-50 minutes under continuous stirring conditions, holding wort at a temperature of 62-64 °C for 55-60 minutes, heating mash to temperature of 76-78 °C, followed by filtration. Grains are washed with tap water at temperature 70 °C. Obtained wort and flush water is evaporated to concentration of dry substances of 35-40 % in a vacuum evaporator at temperature 50-55 °C. Spray dryer drying is performed to moisture content of 2.5-3.0 % at temperature at inlet and outlet of drying chamber of 140-160 °C and 70-90 °C, respectively, and packing in a sealed package.
EFFECT: method ensures production of malt extract with increased duration of storage and high quality of malt extract due to enhancement of nutritive and biological value due to use of triticale grains.
