FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of a powdered polymalt extract of barley, maize and buckwheat malt by biotechnological methods and may be used in alcohol-free, bakery, confectionary, meat-and-milk and other sub-branches of food industry as well as during manufacture of special alimentation for immunocompromised people. The method is as follows: barley, maize, buckwheat grains cleared of grain impurities, dust, metal contaminations are sorted according to grains sizes and washed; alloy is removed, grains are disinfected; every cereal crop grains are soaked separately: barley - at a temperature of 12 - 13 °C till relative moisture content is equal to 42 - 44%, maize - at a temperature of 19 - 20 °C till relative moisture content is equal to 45 - 47%, buckwheat - at a temperature of 15 - 16 °C till relative moisture content is equal to 42 - 44%; grains are sprouted till maximum activity of enzymes of cytolytic, proteolytic, amylolitic action; green malts are crushed separately and mixed at a weight ratio of 1:1:1 with water duty equal to 1:3. The mixture is mashed by the infusion method; for this purpose one performs heating to 42 - 45 °C and maintenance during 40 - 45 minutes for non-starch polysaccharides hydrolysis into hexoses and pentoses as well as proteins to produce amino acids and low-molecular protein substances. For more complete non-starch polysaccharides hydrolysis the mash temperature is increased to 52 - 55 °C and the mash is maintained during 40 - 45 minutes; the mash is maintained during 60 minutes at a temperature of 63 °C for formation of reducing sugars; then the mash temperature is increased to 70 - 72 °C and the mash is maintained till complete saccharification; then the mash is heated to 76 - 78 °C and filtered. The produced wort is boiled out till dry substances concentration is equal to 35 - 40% in a vacuum evaporator apparatus at a temperature of 50 - 55 °C and dried in a spray drier till moisture content is equal to 2.5 - 3.0%, the temperature at the inlet and outlet of the drying chamber being 130 - 150 °C and 60 - 80 °C, respectively; the product is packed into an air-tight package.
EFFECT: invention ensures manufacture of a preventive purpose product that may be used directly for alimentation of healthy people and immunocompromised people as well as enhancement of the ready product quality due to more complete preservation of nutritive and biologically active substances in the process of storage.
