SUBSTANCE: group of inventions intended for usage in poultry-processing industry. Presented method and processing device for processing a set of organs, extracted from a slaughtered poultry using at least two interacting rolls, which form a gap between said rolls, selectively enabling for previously selected elements of said set to pass through said clearance, at that rolls during operation are rotated in opposite directions to move the set of organs and simultaneously facilitate to passing of said selected elements via said clearance, at that the rolls have a cross sectional diameter, the value of which changes in longitudinal direction and depends on the position of the cross section between the input section and outlet section of said rolls so, that to provide each of rolls with a curved contour of surface.
EFFECT: processing set of organs, extracted from a slaughtered poultry.
