FIELD: meat processing.
SUBSTANCE: group of inventions refers to poultry processing industry, namely to the division of a viscary set eviscerated from slaughtered poultry. Guide member (4) is proposed for use in separating into viscera sets extracted from slaughtered poultry, comprising separation support surface (41, 42) having elongated opening (43), for receiving viscera set (1) in a manner whereby at least intestines (15) and gallbladder (18) are suspended below guide member (4) and liver (16) and gizzard (17) above said element (4). Elongated opening (43) extends away from the front edge of the separation support surface, the distal section of the opening is off-set in relation to its proximal section in a direction substantially parallel to the front edge. Below the guide member, gripping member (3) for gripping a part of intestines (15) can be arranged. According to the method of the invention, guide member (4) is moved into contact with the viscera set whereby the intestines and/or gallbladder enters the elongated opening.
EFFECT: more thorough separation of viscera sets extracted from slaughtered poultry at high processing speeds is provided.
