SUBSTANCE: method and processing device for processing a set of organs, extracted from slaughtered poultry, using at least two interacting rolls which form a gap between said rolls, selectively enabling pre-selected in organs from said set of organs to pass through said gap, wherein rolls during operation are rotated in opposite directions, in order to move set of organs and simultaneously facilitate passing of said selected organs via said gap, wherein interacting rolls are controlled exactly perpendicular and across longitudinal direction of rolls so as to adjust gap. Gap is adjusted to a preset constant value along longitudinal direction of rolls.
