SUBSTANCE: invention relates to food industry, in particular, to cutlets. Method comprises preparation of meat or chicken or fish or vegetable mince, which is cut into pieces and passed through an electrical mincing machine with diameter of holes of 4.5…5.0 mm while adding milled raw onion, several cloves of garlic and up to 25 % of mince weight preliminarily milled on electrical mincing machine with diameters of holes 2.5…3.0 mm sprouted grains of winter wheat with sprouts length 1…3 mm, chicken egg is added to obtained mass, stirring, adding salt and pepper by taste, and moulding cutlets from obtained mince.

EFFECT: obtaining cutlets with high nutritive and biological value.
