FIELD: food industry.
SUBSTANCE: invention relates to the food industry and food technology, namely to production of cutlets from blue whiting fish, primarily at home. The method for preparing cutlets from blue whiting fish is characterised by the fact that during preparation of the cutlet mass, fins, tail, guts and the head are removed from a whole blue whiting fish, leaving the skin, the flesh and the spine, the fish is cut into pieces and passed through a meat grinder with a hole diameter of the plate of 4.5…5.0 mm, adding raw chopped onion, garlic cloves, up to 25…30% of the fish mass of sprouted winter wheat grains with a length of 5…7 mm is introduced, pre-chopped in a meat grinder with a hole diameter of the plate of 3.0…3.5 mm, table salt, ground pepper to taste, chicken egg are added to the resulting mass and mixed, and cutlets are formed.
EFFECT: production of cutlets exhibiting high nutritional and biological value is ensured.
