FIELD: food industry.

SUBSTANCE: method of monitoring the quality of the plurality of food products moving in the dynamic production system, based on the assessment of the food product colour. Wherein the method compries the stages of: capturing the images of a plurality of moving food products; said image analysis for determining the intensity variable of at least one colour responsible for the defect; the assessment of the plurality of moving food products as a group based on the colour percentage of at least one colour responsible for the defect, defining thereby the overall group appearance assessment; the assessments of each food product based on the image analysis, thereby obtaining a plurality of individual assessments of the product; comparing the plurality of individual assessments of the product with the desired product colour characteristic. Moreover, the device for the quality monitoring of the plurality of moving food products is disclosed.

EFFECT: group of inventions allows to perform the quality monitoring of the overall group and each single product more quickly and accurately, according to the criterion of the attractiveness to consumers.
