FIELD: food industry.
SUBSTANCE: method involves extracting the bladder from the fish, releasing air from it, with the subsequent salting and heat treatment. Before the heat treatment, the bladder is soaked in brine at an air temperature of no higher than 10 degrees. When preparing the brine, per 100 g of the bladder 100 ml of water is taken, and 3-10 g of salt, 2-5 g of sugar and 0.5-1.0 g of seasonings are added. The heat treatment is carried out for 0.5 to 5 minutes. Thus, a snack is obtained.
EFFECT: obtaining a snack from the fish bladder.
