FIELD: food industry.
SUBSTANCE: to produce a hemp product having protein concentration of at least about 60 wt % (N x 6.25) in terms of dry substance, which is water-soluble at acidic pH values, less than about 4.4, the method is carried out as follows. Extracting the hemp protein source with an aqueous solution of calcium salt to solubilize hemp protein from the protein source and forming an aqueous hemp protein solution. At least partially separating the aqueous hemp protein solution from the residual hemp protein source. Hemp protein aqueous solution is diluted. PH of the aqueous hemp protein solution is adjusted to pH from about 1.5 to about 4.4 to produce acidified aqueous hemp protein solution. Acidified hemp protein solution is clarified if the solution is not transparent. Alternatively, from stage of partial separation to clarification is diluted, pH of the combined aqueous hemp protein solution and the residual hemp protein source is adjusted to pH from about 1.5 to about 4.4 and the acidified aqueous hemp protein solution is separated from the residual hemp protein source. Concentration of the aqueous hemp protein solution while maintaining the ionic strength is substantially constant using the selective membrane technology. Concentrated hemp protein solution is diafiltrated and hemp protein solution is dried. Aqueous solution of the hemp product is a beverage and has a pH of less than 4.4.
EFFECT: group of inventions provides a product which is completely soluble in acidic pH, the product has a mild taste.
