FIELD: food industry.
SUBSTANCE: for obtaining fractionated lecithin, husk-free sunflower kernels are saturated with ethanol at the concentration of 99.8% in an amount ensuring 8-10 wt % of moisture and volatile substances. The sunflower kernels are extruded in the presence of ethanol taken at the ratio to the sunflower kernels as 1:1, to obtain extruded sunflower kernels and ethanol miscella. The ethanol miscella is exposed at a temperature of 0-10°C for 6-12 hours, resulting in the separation of the miscella into two phases. The upper phase consisting of ethanol and the alcohol soluble phospholipid fraction is decanted. The upper phase is treated with the electromagnetic field with the magnetic induction of 0.6-0.8 T for 3-5 minutes. The above phase is separated through a membrane filter with the permeability rR= 5.5×10-9 m into phospholipid miscella and lipid miscella. From the phospholipid miscella, ethanol is removed under vacuum at a residual pressure of 20-30 mbar at a temperature of 50-60°C.
EFFECT: allows to reduce the content of neutral lipids and glycolipids in fractionated lecithin.
