FIELD: food industry.
SUBSTANCE: method for processing husk-free sunflower kernels includes saturating the husk-free sunflower kernels with ethanol with the concentration of 99.8%, in an amount providing the mass ethanol fraction of 10.8%, at the temperature of 40-70°C and the process duration of 20-40 minutes. The sunflower kernels extrusion in the presence of ethanol taken in the ratio by sunflower kernel as 1:5-1:1, at the temperature of 50-70°C for 15-60 seconds, the separation of the extruded sunflower kernels and ethanol miscella, the removal of the ethanol miscella.
EFFECT: invention allows to increase the cell walls destruction degree of raw materials, leading to the oil extraction process intensification, to increase the extractability of partially defatted extruded sunflower kernels and to reduce its oxidation degree.
