FIELD: food industry.
SUBSTANCE: solid confectionery product containing granular powdered ingredients agglomerated under pressure, in which said granular powder ingredients comprise oil powder and from 25 to 75 wt % of milk powder. Wherein the oil powder comprises an inner core comprising an oil and an outer shell comprising a cross-linked emulsifier and wherein the oil powder comprises at least 40 wt % of oil. The method of preparing the solid confectionery product, comprising the steps of: providing an oil powder, wherein said oil powder contains an inner core comprising an oil and an outer shell comprising a cross-linked emulsifier, and wherein the oil powder comprises at least 40 wt % of oil; mixing the oil powder with the milk powder and other powder ingredients; mechanically mixing the ingredients to form a granulate, and moulding or shaping the granulate obtained by means of agglomeration under pressure with obtaining solid confectionery mass.
EFFECT: invention makes it possible to obtain a confectionery product with a high milk content, a low content of saturated fatty acids, without disturbing the organoleptic parameters.
