FIELD: fat-and-oil industry.
SUBSTANCE: invention relates to the fat-and-oil industry. A method for production of lipid fiber powder containing, wt. %: from 40 to 78 of oil or fat and from 22 to 60 of fiber, and the method includes the following stages: a) mixing fiber, oil or fat and water at a mass ratio of fiber and water from 1:2.5 to 1:30; b) drying the mixture obtained at stage a) at a temperature from 50 to 120°C; c) grinding of lipid powder fibers after drying stage b). Moreover, the fiber is an insoluble food fiber in water, characterized by a hydration rate from 15 to 500 cP/min, and at the same time oil or fat has a solid fat content (SFC) at 20°C below 12, wt. %.
EFFECT: invention makes it possible to obtain a lipid fiber powder with increased fluidity.
