FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry. Filling composition containing at least one structure-forming agent and a mixture of fats, wherein the mixture of fats contains at least one solid fat and at least one liquid fat, wherein the filling contains a mixture of fats in amount of 15 wt.% to 50 wt.% of filling, solid fat is present in amount of 10.0 wt.% to 40.0 wt.% of filling, liquid fat is present in amount of 0.5 wt.% to 30.0 wt.% of filling, structuring agent is present in amount of 0.25 wt.% to 25.0 wt.% of filling and structuring agent is flour, or paste, or a combination thereof, wherein paste is obtained from nuts, wherein solid fat has solid fat content from 25 wt.% to 100 wt.% of measured using IUPAC 2.150a at 20 °C. Chocolate product which is a chocolate or a chocolate analogue product containing the filling composition described above, the filling being at least partially surrounded by a chocolate or a chocolate analogue product shell.
EFFECT: invention allows to produce a filling composition based on lipids having a low content of saturated fatty acids; the filling has good organoleptic properties.
