SUBSTANCE: invention relates to spherical particles, to agglomerates of spherical particles, to methods for producing spherical particles, to food suspensions and consumable masses having spherical particles, and to food products containing a food suspension and/or a consumable mass. Spherical particle of a composite powder for producing a chocolate product is proposed, comprising a matrix material of an amorphously solidified biopolymer, namely an amorphously solidified sugar, wherein the matrix material has an equilibrium water content of less than 10 % by weight, wherein the solid particles and/or liquid volumes and/or gas volumes are embedded in the matrix material, and wherein at least one of the following components is embedded in the matrix material: component from cocoa, a dairy component, fat, a flavoring substance. Matrix material contains an amorphously solidified sugar having a dextrose equivalent of greater than 20, or consists of it. Food slurry contains a substantially uniform carrier material in which spherical particles are embedded. Edible mass contains an agglomerate of particles, where some of the particles are spherical particles. According to the invention, the use of embedded cocoa particles reduces the roughness of said cocoa particles and reduces the yield strength when eliminating the need for emulsifiers.

EFFECT: this ensures a reduction in the fat phase of up to 50 % and thus the production of a low-calorie chocolate product.
