FIELD: food industry.
SUBSTANCE: proposed amorphous porous particles contain sugar, filler and surfactant. Said amorphous porous particles have closed porosity of 20–60 %. Sugar is selected from sucrose, fructose, glucose, dextrose, galactose, allulose, maltose, high-dextrose equivalent hydrolysed starch syrup, xylose and any combinations thereof. Also disclosed are a food product with said amorphous particles, a method of producing said particles, method of producing a fatty confectionary product using said amorphous sugar particles and using amorphous sugar particles as a sugar substitute in a food product.
EFFECT: amorphous porous particles are proposed to reduce quantity of sugar in food products.
