SUBSTANCE: invention relates to the confectionery industry and relates to the production of functional flour confectionery products of improved composition. Method of producing cupcakes of functional purpose is proposed, which comprises mixing the following ingredients: chia flour, chicken egg, unrefined cane sugar, fruit juice, chia seeds and baking powder, wherein for the preparation of the dough the yolk is separated from the egg white, whipping the egg white with unrefined cane sugar before the formation of foam for 2–3 minutes, adding pre-sieved and mixed flour with baking powder, subsequent addition of yolk, fruit juice and chia seeds, whipping to increase the volume of the mass 2.5–3-fold for 5–7 minutes, moulding and baking at a temperature of 175–185 °C for 40–45 minutes, wherein ingredients are added with the following component ratio, wt%: chia flour 36.12; chicken egg 15.58; unrefined cane sugar 13.44; fruit juice 30.20; seeds chia 4.15; baking powder 0.51.

EFFECT: invention improves the quality of cupcakes, and widens the range of functional flour confectionery products of improved composition.
