FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used in the production of confectionery products. Method of producing a cereal bar for functional and specialized nutrition is characterized by the fact that it provides for the successive mixing of chia flour, chia seeds, chopped black currant or crushed grapes "kishmish", chopped black plum or apricot, chia and walnut seed oils for 5–7 minutes until the oil is evenly distributed in the mass of the raw material, molding in the form of a bar and baking for 20 minutes at a temperature of 200 °C. in this case, the components are used in the following ratio, wt%: chia flour – 30, chia seeds – 15, crushed black currant or crushed "kishmish" grapes – 20, crushed black plum or apricot – 30, chia seed oil – 1.7, walnut oil – 3.3.
EFFECT: invention allows to improve and improve the quality of the bar, as well as to expand the range of functional confectionery products of improved composition.
