FIELD: food industry.

SUBSTANCE: proposed method for drying and sterilization of food ingredients, food raw materials and food products, as well as modification of starches, starch products and food additives containing starches and starch products, is carried out using microwave radiation generated by magnetrons and infrared radiation generated by infrared emitters. Simultaneous processing is carried out using microwave and infrared radiation. Infrared radiation has a spectrum which includes wavelengths of 7–9 mcm. Also disclosed is a device for drying and sterilization of food ingredients, food raw materials and food products, as well as modification of starches, starch products and food additives containing starches and starch products. Device includes processing chamber and conveyor belt passing through this chamber. Chamber simultaneously accommodates magnetrons and infrared radiators emitting a spectrum including wavelength of 7–9 mcm.

EFFECT: invention is aimed at reducing labor costs and energy costs of sterilization and drying processes of food ingredients, raw materials, including grains, products, production of starch products, including glucose molasses and maltodextrins with a higher dextrose number, reduced dosage of modified food additives due to more uniform distribution of flavoring substances in additives, higher solubility due to change in molecular structure of starches and starch products, increased flowability and reduced caking, provision of standard microbiological parameters and preset moisture content of food products.
