FIELD: biotechnology.

SUBSTANCE: invention relates to an emulsion, a dry particle and a method for producing a dry particle. Emulsion comprises an emulsifier in an amount by weight of about 0.06 % to 0.1 % of the total emulsion weight, wherein the emulsifier comprises a natural extract containing saponins; carbohydrate in an amount by weight of about 5 to about 55 % of the total weight of the emulsion, wherein the carbohydrate has a number average molecular weight of from 445 to about 687 g/mol and includes sucrose; an oxidisable flavour or fragrance in an amount by weight of about 5 to 60 % of the total weight of the emulsion; water in an amount by weight of 15 to 80 % of the total weight of the emulsion; and a polymeric emulsifier in an amount of not more than 10 % of the total weight of the emulsion. Dry particle contains an emulsifier in an amount by weight of about 0.06 % to 0.1 % of the total weight of the dry particle, the emulsifier comprising a natural extract comprising saponins; carbohydrate in an amount by weight from about 5 % to about 55 % of the total weight of the dry particle, wherein the carbohydrate has a number average molecular weight from 445 to about 687 g/mol, and wherein the carbohydrate comprises sucrose; an oxidisable flavour or fragrance in an amount by weight from about 5 % to about 60 % of the total weight of the dry particle; and a polymeric emulsifier in an amount of not more than 10 % of the total weight of the dry particle. Method for producing the dry particle comprises preparing said emulsion and drying the emulsion to obtain a shelf stable dry particle. Invention also relates to an emulsion and a particle prepared by said method.

EFFECT: invention makes it possible to improve the resistance of the product to oxidation and moisture and to prevent caking during storage.
