FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the formulations of flavours and fragrances. Encapsulated flavours and fragrances are in the form of glazed particles encapsulated by a plasmolysed microorganism, wherein the plasmolysed microorganism encapsulating the flavour or fragrance substance is a viscous dough formed from a mixture of water, a flavour or fragrance substance and a plasmolysed microorganism, and the weight ratio of the microorganism to water is in the range of about 1.5:1 to about 4:1, and wherein the dough is provided in an amount of up to about 55 wt% of the total weight of the particle. Glazed particle carrier comprises a polymeric water-soluble emulsifier and a carbohydrate in which a polymeric water-soluble emulsifier is provided in an amount of about 5 wt% to about 100 wt% of the total weight of the carrier, and said carrier is provided in an amount of up to about 80 wt% of the total weight of the particle.
EFFECT: present invention also relates to a process for the preparation of formulations of encapsulated flavours and fragrances.
