FIELD: food industry.
SUBSTANCE: invention relates to the field of the food industry, in particular to a method and system for producing fried food pieces. Method provides for immersion of food pieces in the first edible fluid-like medium in the form of a product layer, formation of a monolayer and immersion in a second edible fluid-like fluid. From food pieces oriented vertically, oil can also drain on a downcomer conveyor having at least one vertical orienting element.
EFFECT: method and the system provide a food product with a lower oil content, while maintaining the organoleptic properties of the food product.
