FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely the production of aspic and jelly. Method includes the processes of preliminary preparation of raw materials, addition of water and salt, cooking at a temperature of 93±3 °C, cooling, broth separation, separation of raw materials from bones, grinding raw materials, placing broth and crushed meat raw materials in separate containers, tight sealing, sterilization, storage, selling to the consumer in the form of a semi-finished product having in a set a container with raw materials and a capacity with a broth. Consumer independently carries out opening of container with the crushed raw material, a premise of raw materials in forms, addition of spices, opening of container with a broth, pouring broth into molds with raw materials, cooling down to obtaining the necessary consistency.
EFFECT: method provides long-term storage of the proposed meat product as a semi-finished product without the use of preservatives, giving the product a taste at the request of the consumer.
