FIELD: food industry.

SUBSTANCE: invention relates to food industry, namely to production of jellied meat products including aspic, broth jell and others. The method involves the processes of meat raw material preliminary preparation, meat broth boiling at a temperature of 90-96°C, preparation of complex food additives, spices and preservatives, meat raw material milling and the listed constituent parts mixing with addition of the required quantity of broth. The meat raw material is boiled in drinking water containing Ag+ silver ions, silver concentration in water being 0.05 mg/l of water. The silver water production process is implemented in two stages: preliminary production of activated alkali water and its enrichment with colloidal silver particles.

EFFECT: method ensures extension of jellied meat products storage life combined with preservatives quantity reduction.
