FIELD: meat processing industry.
SUBSTANCE: invention relates to the meat processing industry and can be used for the production of cooked sausage products with a high content of pork skin with a balanced amino acid composition. Product contains pork skin, beef head meat, beef spleen and protein preparation made from milk whey TIPRO-800. Pork skin is kept in hydrochloric acid solution for 24 hours, followed by washing in water. Stuffing is made according to the recipe, sausage loaves are formed and heat treatment and cooling are carried out.
EFFECT: method makes it possible to obtain a meat product with a balanced amino acid composition and a low cost price by using by-products and reducing energy inputs for the preparation of pork skin.
