FIELD: food industry.

SUBSTANCE: invention is aimed at using in meat industry. Method implies farce preparation by pork meat and fat disintegration in a meat mincing machine, addition of salt, black pepper, fresh crushed garlic, fresh crushed onions, fresh cooled pork blood, formation of long loafs of sausage, their thermal processing and cooling. The eggs, integral cow milk and fresh crushed garlic are added to the farce. Thermal processing is carried out by a baking in an oven of the gas or electric oven at temperature 200°C during 50 mines on greased with vegetable oil baking tray.

EFFECT: invention improves structurally-mechanical and is functional-technological properties of meat raw materials, quality and biological value of ready product.
