FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely the production of auxiliary materials for the meat industry, and can be used to produce a curing mixture with a reduced sodium content for the production of meat products. Composition of the curing mixture involves the use of the following ingredients in place of sodium chloride: potassium chloride, calcium chloride dichloride, lysine hydrochloride, sodium nitrite. By means of these ingredients, up to 60.7 % sodium chloride is replaced.
EFFECT: invention provides the formation of technological properties of meat and flavor characteristics of finished products with a reduced sodium content.
