FIELD: meat industry.
SUBSTANCE: invention is related to production of boiled smoked pork products. The proposed method for production of a boiled smoked pork product includes injection of raw materials with brine, massaging, ripening of a salted semi-finished product, cooking with a steam-air mixture, intermediate cooling, applying an edible film-forming protective coating with a smoke flavour by immersion, drying with air, cooling, while the raw material is injected with brine in the amount of 15% by weight of raw materials, consisting of food salt - 4.8 wt.%, nitrite-curing mixture - 5.0 wt.%, salt substitute - calcium chloride and potassium chloride, taken in a ratio of 1:1 - 4.2 wt.%, water - the rest, and an edible film-forming protective coating is prepared on the basis of a 2% lactic acid solution, to which 3 wt.% dry chitosan with a degree of diacetylation of 85% is added with constant stirring, followed by 0.1 wt.% of smoke flavour, 1 wt.% of gelatine, 3 wt.% of arabinogalactan.
EFFECT: invention provides for expansion of the range of boiled smoked products with a reduced content of edible salt, while stabilizing the quality of products during storage.
