FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary industry. Method for production of dietary chocolate based on natural sweeteners provides for mixing of grated cocoa, cocoa butter, erythritol and stevioside, color blending, conching and tempering of the chocolate mass, its casting into heated molds, cooling of chocolate, extracting of chocolate bars from molds, wrapping and packing of chocolate. Starting components are used in the following ratio, wt%: grated cocoa 55–64.5; cocoa butter 25–35; erythritol 10–13; stevioside 0.02–0.04.
EFFECT: invention makes it possible to obtain chocolate using sweeteners with a smooth and shiny face, a firm consistency, a homogeneous structure, a sweet taste characteristic of dark chocolate, without foreign taste and odor.
