FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Method provides for collection and purification of curd whey by microfiltration, concentration of curd whey by the method of ultrafiltration to the content of solids 11–12 % and addition of dietary supplements "Selenopropionics" of 5 % of the total weight of the drink. Then, mixing is carried out for 2–4 minutes at a temperature of 18–22 °C, pasteurization by heating up to 55–60 °C with an exposure of 0.2–0.3 min and cooling to 20–22 °C. Add peach filler and flavor additives. Mix for 13–15 minutes at a temperature of 20–22 °C, poured and cooled, with the following ratio of the initial components, mass%: concentrated curd whey of 84–86; supplements "Selenopropionics" – 5; peach filler – 8–10; flavoring additives – 1.
EFFECT: invention makes it possible to simplify the technological process, increase the purity of the finished product and improve the organoleptic properties in terms of the appearance of the finished product.
