SUBSTANCE: using to determine the thermal state of fish raw materials. Summary of the Invention is the determination of the thermal state of the fish raw material is carried out by identifying free and bound water in the muscle tissue, including sampling, placing it in a tempered cell of a nuclear magnetic resonance relaxometer, recording the signals of proton relaxation of two types of "fast" and "slow" components, and calculation of the relaxation coefficient determining the thermal state of the raw material, according to the formula: KR=Ab/Am, where Ab – "fast" component, Am – "slow" component, at the same time, fish raw materials with a coefficient (KR)≥3.0, to frozen – KR≤2.5.
EFFECT: ensuring the possibility of obtaining a reliable, rapid determination of the thermal state of fish raw materials.
