FIELD: food industry.
SUBSTANCE: invention is intended for usage in fish industry during preparation of moulded semi-products from secondary raw material. One prepares skin-off fish fillet from defrosted or cooled fish raw material and ready salted-and-smoked products having mechanical damages or softening because of spawning changes. The produced fillet is cooled till the temperature in the products bulk is conditioned to 5°C and milled to produce mince. One introduces additives in the form of vegetable, grit, laminaria and taste-and-flavour components. The produced fish mixture is moulded into semi-products.
EFFECT: invention ensures reduction of the quantity of solid wastes generated during manufacture of moulded semi-products with improved organoleptic properties and enhanced nutritive value; production of additional products alongside with the basic ones, allows to extend the products range, increase the yield of food fish products manufactured from a supplied raw material unit.
