SUBSTANCE: invention relates to the production of freeze-dried products, in particular to the production of freeze-dried pollock quenelles. The following is proposed: a method of production of freeze-dried pollock quenelles, including obtaining fillets from fish raw materials, preparing recipe ingredients, chopping, preparing minced meat, molding, heat treatment, cooling, freezing, packaging, while frozen headless pollock is used as fish raw material, which is defrosted and cut up for clean fillet without skin and bones, white wheat bread soaked in cow's milk with 1.5% amount of fat by weight is added to the chopped fillet, chicken egg white, table salt and xanthan gum are also added to the mixture, the mixture is beaten, after molding and heat treatment, the quenelles are frozen in a blast freezing chamber to a temperature of -22°C, then the product is sublimated at a temperature of -50°C and pressure 3 Pa for 7 hours, the composition of minced meat in kg per 100 kg is as follows: 74 of chopped pollock; 7 of white wheat bread; 10 of cow's milk with 1.5% amount of fat by weight; 7 of chicken egg white; 1 of table salt; 1 of xanthan gum. The pollock fillet is crushed in a cutter at a rotation speed of 1,500 rpm for 5 minutes, the dumpling mass is beaten in a cutter at a speed of 1,500 rpm for 7 minutes, the heat treatment of the formed dumplings is carried out in a double boiler at 100°C for 15 minutes, and after heat treatment the quenelles are cooled to a temperature of 30–35°C.

EFFECT: invention provides the production of a dried high-protein dietary product.
