SUBSTANCE: invention relates to food industry, namely to methods of disinfection of food products. Method of surface disinfection of egg by irradiation with beam of accelerated electrons provides irradiation of egg in airproof plastic wrap by selecting electron energy. In this case, such a distribution profile of absorbed dose inside egg is selected, that when irradiated, destroy all kinds of microorganisms both on surface of shell absorbed by a dose up to 25 kGy, and in its pores and air chamber absorbed by dose up to 5 kGy, up to sub inner shell membranes in total at depth of 0.47 mm. Irradiation of the albumen itself by accelerated electrons is not performed.

EFFECT: invention allows to obtain safe food product without its microbiological contamination.
