FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method for surface disinfection of an egg by irradiation with a beam of accelerated electrons involves combined irradiation with electrons in the form of a nanosecond electron beam and high-pressure gas discharge plasma radiation. Energy in the gas discharge is 375 J for container of 10 eggs. Energy of the electrons is exposed to the surface of the shell absorbed by dose of 5 kGy and in its pores and the air chamber absorbed by dose of 5 kGy, up to sub-shell envelopes, at a total depth of up to 0.47 mm. Irradiation of the egg protein itself with accelerated electrons does not occur.
EFFECT: invention allows destroying considerable part of microorganisms on egg surface without changing qualitative parameters of eggs.
