FIELD: food industry.
SUBSTANCE: method includes washing, grinding, cooking and separating the broth. As a raw material, the skin of the commercial fish species is used. After grinding, the raw material is treated with a solution of succinic acid with a concentration of 0.1 % for swelling at a ratio of solid and liquid fractions of 1:1–1.5. Brew is carried out in a solution of succinic acid with a concentration of 0.04 % for 35–45 minutes, at a temperature not lower than 90 °C in the center of the boiler and no higher than 95 °C at the walls. After separation of the broth, the solid fraction is secondarily subjected to grinding to particles of 2–3 mm in size and mix with the broth in the proportions according to the kind of culinary product.
EFFECT: method is proposed which includes washing, grinding, cooking and separating the broth.
