FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for producing a food dispersion is proposed, which includes the use of fish scales as raw materials, which are washed with water, processed in a mixer with the addition of dry common salt, baking soda and crushed ice in a percentage ratio of 5:1:20, respectively, of the mass of the used scale for 10 minutes. Then they are washed with water and the resulting raw material is kept for at least 30 minutes in an aqueous solution of salt, baking soda and citrus peel. The resulting mixture is dried at a temperature of not more than 35°C to a moisture content of not more than 10%, after which it is crushed and separated, obtaining fibrous collagen and powder hydroxyapatite fractions, which are then added to the base of the dispersion, which is used as crushed vegetable, fish and animal raw materials.
EFFECT: invention improves the organoleptic characteristics of the products.
