FIELD: food industry.
SUBSTANCE: method for production of food collagen-containing products is characterized by that raw material is represented by fish skin with scales, washed with water and placed into a mixer, treated with dry edible salt, edible soda and ice in amount of 10 %:1.0 %:20 % of weight of raw material to separation of scales from skin with subsequent washing with water, after washing, obtained mixture of skin with scale is separated and part of skin is separated, after which remaining mixture of skin with scales and skin removed from mixture is subjected to thermal treatment in separate containers in liquids, containing at least one type of organic acid at temperature of 85–100 °C for (0.5–5) minutes, wherein ratio of weight parts of mixture of skin with scale and liquid is selected as 1:(2.5–3.5) by weight, and ratio of weight parts of skin and liquid is selected as 1:(1.5–2.5).
EFFECT: invention allows to produce nutritious vitaminized collagen-containing products of different consistence with improved organoleptic indices by smell and color, characterized by quantitative content of collagen and mineral components, intended for different categories of consumers.
