FIELD: catering.
SUBSTANCE: invention relates to the field of public catering and can be used on submarines, ships and other mobile means, where a variety of ready meals is required with high stability during operation. Grill-processing device for meat includes a cabinet with a place for the installation of skewers, a heater, made in the form of a module with heating elements, each in its own vertical plane in the central part of the frying chamber, formed by a reflector provided with a thermally insulated handle, a holding latch in the closed position and a release lock of the side doors and rigidly fixed upper, front and rear reflectors. On the mentioned reflectors, a thermal radiation module is mounted and the fixed fixation system in a given manual rotation of the skewer. Special reflective coating of infrared radiation is applied to the inner wall of the housing by spraying in the form of a layer of zirconium nitride and chromium 150 mcm thick. High-temperature and high-efficiency quartz HT aerogel is sprayed onto the outer wall. In the upper part of the housing, a lid with a smoke trap and a pump is movably fixed, fixed at the base by a hose, the second end connected through a stopper with drainage outlet. Heating element is an infrared quartz heater of rectangular shape.
EFFECT: as a result, there is a reduction in heat losses, an increase in efficiency at operation, expansion of functionality, possibility of recycling smoke and steam at work, reduce in the cooking time of the prepared dish.
