FIELD: biochemistry.
SUBSTANCE: group of inventions relates to variants of a yeast cell of the genus saccharomycetes which is capable of replication under aerobic conditions on a substrate containing at least one C5 sugar and the use of such a cell. Yeast cell is characterised in that it satisfies the xylose growth test or the growth test on the CP medium, and also in that, in its genome, the expression of the RPE1, RKI1, TKL1 and TAL1 genes of the pentose pathway is placed under the control of a promoter of a gene not repressed by anaerobiosis or catabolic repression induced by any carbon source, and expressed during alcohol fermentation, copies of the GRE 3 gene encoding the aldose reductase are removed, the native XKS1 gene is overexpressed, at least one copy of the Pichia stipitis gene encoding the xylose dehydrogenase is introduced, and at least one copy of the gene encoding the xylose isomerase is introduced. Use said yeast cell for making bread is also disclosed.
EFFECT: group of inventions provides for the production of yeasts that are highly effective in their final industrial application.
