FIELD: food industry.
SUBSTANCE: invention relates to poultry-processing industry and can be used in production of egg products. Method comprises separating egg white from egg yolk, mixing egg white mass, addition of salt and aqueous solution of citric acid to its concentration in egg white mixture from 0.1 to 0.15 % by weight and until pH of egg white mixture reaches 6.2–7.3. Egg white mixture is held for 10–25 minutes and heat treatment is carried out in one stage until the temperature reaches 86–88 °C. Then liquid phase is separated, resulting coagulum is cooled and packaged.
EFFECT: invention makes it possible to obtain product with high output.
