FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely confectionery industry. Method for producing jelly marmalade of specialized purposes enriched with succinic acid provides for addition of concentrated water infusions of hibiscus flowers to marmalade in mass ratio of dried hibiscus flowers to water of 1:10. As sweeteners sorbitol (E 420) is used with sweetness factor of 0.6 in combination with stevioside "Crystal" – enzymatic stevioside with sweetness ratio of 135–150 (E 960). And additionally enriched with succinic acid (E 363).
EFFECT: invention makes it possible to obtain marmalade of specialized diabetic purposes.
