FIELD: food industry.
SUBSTANCE: one proposes a method for production of bars enriched with powders of the fruiting body and Hericium erinaceus fungus mycelium involving intake of ingredients in the form of: oat flakes, peanut and coconut flakes, honey, pistachio paste, chocolate, table salt, coconut oil, vanillin, cashew kernels, dried strawberries, soya protein isolate, freeze-dried strawberries, powder from mycelium and powder from fruiting body of fungus Hericium erinaceus, preparation of ingredients by drying oat flakes at temperature 180 °C for 15 minutes, grinding cashew kernels and dried strawberries to size of 1-3 mm and 3 mm, respectively, melting coconut oil in a water bath at temperature 50 °C for 6 minutes, followed by mixing ingredients to create a homogeneous mass for 10-15 minutes with laying obtained mixture into moulds for bars at controlled temperature 18-22 °C and humidity 45-50%, melting chocolate at 50 °C in a water bath and glazing bars with further cooling until solidification.
EFFECT: invention improves the organoleptic and physical and chemical properties of the obtained product, enriches with bioactive compounds and improves the functional properties of the product with high biological value, promotes prevention of diseases of the digestive and cardiovascular systems, reduces cholesterol levels, strengthens the immune system and has an antioxidant effect.
