FIELD: alcoholic beverages.
SUBSTANCE: method provides for fermentation and distillation of the mash in a bregorectification unit, including a brew, an emulsion and two distillation columns, one of which is intended for production of rectified alcohol, and the second – an additional one – for production of grain distillate. Fermented distillate is fed to the feeding of distillation and additional distillation columns. In the column, the alcohol is freed from highly volatile impurities, which are withdrawn as a fraction of the head ethyl alcohol from the condenser of the column, and the resulting epurate is fed to the rectification column feed. In the distillation column, the alcohol is concentrated by freeing it of remaining lightly volatile impurities, the concentration of which is carried out at the top of the column, and through a condenser in an amount of 1.0–1.5 % of the conditioned alcohol is returned to the column. Selection of rectified alcohol is carried out from 5 to 9 plates of the distillation column, counting from above. Feed of the additional distillation column is also carried out by epoxy head fraction fractions from the condenser of the epilation column in an amount of 3–15 % of the conditioned alcohol and a fusel fraction from the bottom of the distillation column in an amount of 0.5–5 % of the conventional alcohol. Concentrated at the top of the additional distillation column, volatile impurities in an amount of 0.5–1.5 % of the conditioned alcohol are removed to the collection as a fraction of the head ethyl alcohol. Fusel fraction from the bottom of the additional distillation column is taken to the collection in an amount of 0.1–0.3 % of the conventional alcohol, and the cereal distillate is taken from 9 to 11 of a further distillation column plate, counting from above. Plant for production of a grain distillate and rectified alcohol contains a scalding, an emulsion and two rectification columns: one of which is intended for production of rectified alcohol, the second – an additional one – for production of grain distillate and heat exchange equipment. Additional distillation column is installed in such a way that its supply is provided with a detachable distillate from a brazing column, epoxy head fraction fractions from the condenser column and a fusel fraction from the bottom of the distillation column.
EFFECT: inventions allow to obtain simultaneously different products – rectified alcohol and grain distillate, and also to improve the quality of rectified alcohol without the use of additional columns, and to reduce production waste.
